Beautiful Roast Rack of Pork with Smoked Paprika Rub


Ingredients:

  1. Full Rack of Pork ,3kg

  2. 2 cloves of chopped garlic

  3. 2 tablespoons of smoked paprika

  4. 1 tablespoon of butter

  5. 2 sprigs of roughly chopped fresh rosemary

  6. Olive oil

  7. 2 parsnips 

  8. 2 carrots

  9. 2 onions

  10. Salt to season


Method:

  1. To start, score the skin of your rack of pork about 2 hours before cooking and leave in the fridge. Take out of the fridge 30 mins before you are ready to cook so it can rise to room temperature.

  2. Preheat your oven to 200°C. In a bowl combine your garlic, paprika, rosemary and butter in a bowl to form your rub for the pork. Smear your rub over the meat being sure to cover all of it.

  3. Roughly chop your parsnips, carrots and onions before tossing in the roasting dish with a small glug of olive oil and a pinch of salt.

  4. Lay your pork on top of your veg making sure that the skin sid is pointing upwards.

  5. Place your pork in the oven and cook for approximately 50 minutes per kg (roughly 2 hours 30 minutes). After the first 15 minutes reduce the heat to 180°C.

  6. When cooked remove form the oven cover it with tin foil allowing to rest for 20 mins.

  7. Carve and serve.
