Creamy Summer Coleslaw
Ingredients:
1/4 white cabbage
1/4 purple cabbage
2 carrots
mayonnaise
salt & pepper
squeeze of lemon
How to prepare:
Peel and grate carrots into a large mixing bowl.
Add a pinch of salt and pepper, stir and let it rest to release some juices while you prepare the other ingredients.
Grate or finely shred cabbage into bowl and mix with carrots.
Add in 2-3 heaped tablespoons of mayonnaise and a squeeze of lemon juice.
Stir together well and season to taste.
